Energy bites for any time of day

My breakfast preference is odd to say the least—I’m not a huge eater until about noon & I’m not crazy about breakfast food (bagels don’t count, I could eat those any time of day). However, I can’t just jump into a salad—some kind of breakfast-oriented food has to pass my lips before I allow lunch in.

I inherited a delicious “energy bite” recipe from my mom during quarantine that packs protein, nutrients & flavor into the perfectly-sized amount for a quick, on-the-go breakfast. If you’re anything like me, you now have permission to focus your energy on lunch.

Ingredients:

  • 1 cup Old Fashioned Quaker Oats (or the rolled oats of your preference)

  • 1/2 cup creamy peanut butter of your choosing (you can sub almond or other nut butter if you prefer)

  • 1/2 cup flax seeds

  • 1/2 cup semi-sweet chocolate chips or carob chips

  • 1/3 cup honey

  • 1 tbsp. chia seeds

  • 1 tsp. vanilla extract

Directions:

  1. Mix all ingredients together in a medium mixing bowl

  2. Form into small balls—about the size of a golf ball

  3. Refrigerate overnight (or freeze if you want to save for the coming weeks)

  4. Enjoy!
